Popcorn Power Cookies

2 qts Popped Popcorn

1/2 cup sliced almonds

1/2 cup shredded coconut

1/2 cup dried apricots, chopped

1/2 cup sweetened dried cranberries (orange flavored cranberries, good)

1/2 cup sunflower seeds or soy nuts

3 Tbsp butter

2/3 cup honey

1/4 cup brown sugar

2 tsp vanilla extract

1/2 tsp salt

Preheat oven to 300 degrees. Line a 13x9 pan with foil and spray lightly with cooking spray. Place popcorn, almonds, coconut, apricots, cranberries and sunflower seeds in large bowl and set aside. In a small sauce pan, heat the butter, honey, brown sugar, vanilla and salt over medium heat. When heated through pour over popcorn mixture. Stir to blend all ingredients and pour into prepared pan. Press mixture lightly and evenlly into pan. Bake 30 minutes or until lightly brown. Cool and cut into squares to serve.
