Fortune Cookies

 

1 lrg. egg

¼ cup sugar

2 Tbsp. canola oil

2 Tbsp. water

¼ cup cornstarch

 

In a medium bowl, beat the egg and sugar until thick and light colored.  Beat in the canola oil.  Transfer 1 tsp. of the egg mixture to a small bowl, add the water and cornstarch, and stir until smooth.  Blend that mixture into the rest of the egg mixture.  Preheat griddle or cast iron frying pan.  Drop the batter by tablespoonfuls on to the hot griddle and se the back of the spoon to spread the batter into 3 ½ to 4 inch circles.  Cook for 5 to 8 minutes, until the cookies are golden.  Remove from the griddle and fold in half over a pencil or wooden dowel to form the fortune cookie shape.  Can add a fortune before closing.
