Peanut Butter Chocolate Rice Crispy Treats

 

1 Tbsp margarine

3 Tbsp Peanut butter

1/8 tsp salt

5 cups mini marshmallows

½ tsp vanilla extract

6 cups rice crispy cereal

1 bag chocolate chips (12oz)

non-stick cooking spray

 

Combine margarine, peanut butter, and salt in a large sauce pan.  When melted add marshmallows and vanilla extract.  Remove from heat and add rice crispy cereal and stir until well coated with marshmallows.  Spray 9x13 inch dish with non-stick cooking spray.  Pour the mixture into dish and use wax paper or lightly greased hand to flatten treats out.  Prepare topping by pouring chocolate chips in microwave safe bowl.  Heat on low power for 1 to 2 minutes.  Gently stir and then heat for an additional minute.  Stir again, and heat for additional minute if chocolate is not smooth.  When smooth, use spatula to spread evenly over treats.  Cool at room temp.
