Petite Cherry Cheese

8 oz cream cheese

1 tsp. vanilla

½ cup + 1/8 cup sugar

1 egg

1 can cherry filling (21 oz) (will top @ 6 dz.)

 

Mix all in processor.  Fill cupcake liner to the top with mixture.  Bake for 15 minutes at 400 degrees.  Remove from oven.  Top each cheesecake cup with one cherry.  Then refrigerate.  Use medium cupcake liners.  Will make 1 ½ to 2 dz.
