Peanut Cake Squares

  

4 eggs

1 ¾ cups sugar

1 tsp vanilla extract

1 ¾ cups flour

3 tsp baking powder

½ tsp salt

1 cup milk

¼ cup butter, melted

 

Frosting:

7 ½ cups powdered sugar

2/3 cups milk

2 tsp vanilla extract

1/8 tsp salt

6 cups finely chopped peanuts

 

In a large bowl, beat eggs, sugar, and vanilla until thick and lemon-colored.  Combine the flour, baking powder and salt, add to egg mixture.  Beat on low speed until combined.  Beat in milk and butter.  Pour into a greased 13x9” baking pan.  Bake at 350 for 30 to 35 minutes, check for doneness with toothpick.  Cool on wire rack.  Cut into squares and cover and freeze overnight.  To make the frosting, in a small bowl beat powdered sugar, milk, vanilla, and salt until smooth.  Frost the top and sides of cake and sprinkle chopped peanuts on top. Place cake into refrigerator until ready to serve.
