Macadamia Nut Brittle

 

½ cup corn syrup

1 cup sugar

1 cup macadamia nuts, chopped

1/8 tsp. salt, for unsalted nuts

1 tsp. vanilla

1 Tbsp. butter

1 tsp. baking soda

 

place syrup, sugar and nuts into a 4 cup measuring cup.  Microwave 6 to 8 minutes on high, stir once or twice.  Add salt only if using unsalted nuts.  Add butter and vanilla and microwave for 1 minute.  Add baking soda and stir until foamy and smooth.  Pour out onto greased pan.  Cool for 1 hour.  Break into bite size pieces.

**Can use same recipe for regular peanut brittle**
