Chinese Almond Cookies

 

1 cup flour

¾ cup powdered sugar

¼ tsp. salt

½ cup finely ground blanched almonds

6 Tbsp. peanut oil

1 egg well beaten

1 tsp. almond extract

whole blanched almonds

 

Sift flour, sugar, salt, and ground almonds together.  Add oil, stir egg and extract.  Roll dough to about ¼ inch thickness.  Cut into small rounds.  Press a whole almond in center of each.  Bake at 375 degrees for 15 minutes.
