Maple Walnut Squares

 

Crust

1 ½ cups all purpose flour

¼ cups brown sugar

½ cup butter or margarine

 

Filling

2/3 cup brown sugar, packed

1 cup maple syrup

2 large eggs, slightly beaten

½ tsp vanilla extract

2 Tbsp all purpose flour

¼ tsp salt

1 cup walnuts, chopped

 

To make the crust, pre-heat oven to 350 degrees.  Grease a 9x13 inch baking pan.  In a small bowl, combine flour and sugar, cut in butter until crumbly.  Press into the bottom of prepared pan.  Bake for 15 minutes, allow to cool. 

 

To make the filling, combine brown sugar and maple syrup in a small saucepan and simmer for 5 minutes.  In a small mixing bowl slightly beat eggs.  Slowly pour syrup over beaten eggs, and stir constantly.  Stir in vanilla, flour, and salt.  Pour mixture over baked crust.  Sprinkle with walnuts.  Bake for 20 to 25 minutes.  Cool and cut into 2 inch squares.
