Coconut Disc Cookies
2 Tbsp. vegetable shortening
½ cup sugar
1 lrg. egg
2 Tbsp. heavy cream
¼ tsp. rum
1 cup packaged biscuit mix
2/3 cup shredded coconut
Preheat oven to 375 degrees. Lightly grease baking sheet. In large bowl, beat the vegetable shortening, sugar, egg, heavy cream, and rum. Gradually blend in the biscuit mix and coconut. Drop the dough by spoonfuls 1 ½ inches apart onto prepared baking sheet. Bake for 8 to 10 minutes, until lightly colored. Trasfer to wire racks to cool.
