Jumbo Chocolate Chunk Cookies

 

2 ½ cups all purpose flour

1 1/3 cups sugar

½ cup unsweetened cocoa powder

2 tsp baking powder

1 tsp salt

1 cup solid vegetable shortening

4 tsp vanilla

4 eggs

2 cups pecans, coarsely chopped

1 cup raisins

1 cup semisweet chocolate chips

1 cup white chocolate baking chips

 

Preheat oven to 350 degrees.  Beat in large bowl on medium speed until mixture resembles coarse crumbs the first 6 ingredients.  Beat in the vanilla and the eggs.  Stir in until well blended the last 4 ingredients.  Drop dough by ¼ cupfuls onto ungreased baking sheets, spacing about 2 inches apart.  Bake until cookies are just slightly crackly on top, 15 minutes.  Remove sheet to rack and let stand until cookies firm slightly.  Transfer cookies to racks to cool.
