Coconut Angel Food Cake w/ Kiwi Sauce

 

1 ½ cups sweetened coconut, shredded

1 package angel food cake mix (16 oz)

6 ripe kiwi fruit, peeled, cut in chinks

1/3 cup powdered sugar

1 drop green food coloring

 

Preheat oven as directed on cake mix package.  Spread coconut out on a baking sheet.  Toast, stirring several times and watching carefully, about 5 minutes, or until lightly browned.  Transfer to a plate, cool.  Place rack in lower third of oven.  Beat cake mix and water as directed on package, adding coconut during last 10 seconds of beating.  Pour batter into an ungreased angel food pan; bake and cool as directed on package.  In food processor, puree kiwi fruit, sugar and food coloring.  Pour sauce on plate before cake is placed on the plate.
