Pineapple Cake

 

1 ½ cups sugar

2 cups flour

1 tsp baking soda

1 can (15oz) crushed pineapple, undrained

2 eggs

½ cup packed light brown sugar

¼ cup chopped walnuts or pecans

vanilla icing (not frosting, like cinnamon roll icing), heated

 

Preheat oven to 350 degrees.  Mix the sugar, flour and baking soda in a bowl.  Add the pineapple and eggs.  Mix well and pour into a greased and floured 9x13 inch baking pan.  Combine the brown sugar and nuts and sprinkle over the batter.  Bake for 30 minutes or until toothpick test comes out clean.  Remove cake from oven and pour hot icing over the top.  Serve warm.
