Tomato Crostini

 

12 slices Italian bread, ½ inch thickness

¼ cup garlic olive oil

4-6 roma tomatoes

3 Tbsp. basil

1 Tbsp. large capers or chopped olives

½ tsp. salt

½ tsp. pepper

1 ½ cup mozzarella cheese, chopped

 

Preheat oven to 375 degrees.  Place bread slices on ungreased cookie sheets.  Drizzle 1 tsp. oil over each slice of bread.  In a bowl mix tomato, basil, capers, cheese, salt and pepper.  Spread equally on bread slices.  Bake about 8 minutes or until bread is hot and cheese is melted.  Serve hot.
