Bacon Cheddar Jalapeno Poppers
12 lrg jalapenos, sliced in half lengthwise
1 (8oz) pkg cream cheese, room temp
1 cup shrap cheddar cheese, grated
1 cup monterey jack cheese, grated
1/2cup Panko crumbs
1Tbsp unsalted butter, melted
12 slices thick-cut bacon, cut in half lengthwise, strips
salt and pepper to taste
Preheat oven 400degrees. Line a sheet pan with parchment paper. Mix cream cheese and other cheeses, along with salt and pepper until mixed well and creamy. Stuff each half of jalapeno with mixture.
In another bowl combine Panko crumbs and melted butter. Add salt and pepper to taste. Sprinkle a good amount of this mixture over stuffed jalapeno. Wrap a strip of bacon around each jalapeno. Secure with toothpick if necessary.
Place onto baking sheet. Bake about 20-25minutes or until jalapenos are tender and bacon is crisp. Cool before serving.
