Grilled Portobello Mushroom with Hummus & Feta Cheese

 

4 lrg Portobello mushrooms

salt and pepper

olive oil

1 container (8 oz) red pepper hummus

crumbled feta cheese, to taste

 

 

Preheat barbecue. Remove stems from mushrooms.  Drizzle olive oil on mushroom and sprinkle with salt and pepper.  Throw mushrooms onto the grill for about 5 minutes per side.  Remove from heat equally spoon hummus onto each mushroom.  Top with feta cheese.  Drizzle with more olive oil and salt and pepper.
