Tempura Avocado

 

4 avocados, peeled and sliced ½ inch thick

1 cup flour, sifted

1 egg

1 cup cold water

olive oil, for frying

 

Heat olive oil in a frying pan.  To make the tempura batter, mix together the flour, egg and cold water in a shallow casserole dish.  Dip each avocado piece in the batter.  Gently place battered avocado in boiling oil and fry until golden.  Remove from oil and place on a napkin covered plate.  Ranch dressing is a good dip for the tempura avocado.
