Avocado Bruschetta

 

1 ripe avocado, forked mashed

2 garlic cloves

1 Tbsp sweet onion

½ tsp chili flakes

1 Tbsp lime juice

2 roma tomatoes, chopped

4 Tbsp parmesan cheese, grated

8 slices baguette (1/2 inch slices)

2 Tbsp olive oil

 

In a mini chopper, combine, onion, garlic, chili flakes, and lime juice until very fine.  In a small mixing bowl pour onion/garlic mixture in and gently toss together with the fork mashed avocado.  Spread olive oil on both sides of the baguette and place on an oven safe plate.  Broil baguettes on one side then flip over and do the same for other side.  Spread avocado mixture on toasted baguettes.  Top with chopped roma tomatoes and sprinkle with parmesan cheese.  Place back on oven safe dish and set under the broiler until the parmesan is melted, about 2 minutes.  Serve immediately.
