Avocado Stuffed Eggs

 

12 hard boiled eggs, peeled and halved

2 ripe avocados, pitted, peeled, and mashed

1 clove garlic, pressed

1 Tbsp, olive oil

Cayeanne pepper

Cheddar cheese, grated

Bacon, cooked, crispy, minced

Black pepper

 

Scoop egg yolks into a bowl and mix together with the avocado, garlic, olive oil, and salt, until smooth.  Scoop mixture into a pipe or a sanchez bag with the corner snipped off after it is full with the mixture.  Squeeze mixture into the egg white halves.  Top each egg with cheddar cheese, crispy bacon, and black pepper to taste.  Chill in refrigerator until ready to be eaten.
