Cottage Stuffed Mushroooms
12 medium fresh mushrooms
3 Tbsp butter
½ cup seasoned stuffing mix
1/3 cup small-curd cottage cheese
¼ cup finely minced onion
garlic powder to taste
mozzarella, finely grated to taste
½ cup water
Preheat broiler. Clean the mushrooms and remove the stems. Finely chop the stems, and sauté in butter along with the onion until tender. Add garlic powder and remove from heat. Stir in the stuffing. Add cottage cheese, and stir. Equally stuff each mushroom and sprinkle top with mozzarella cheese. Add about ½ cup water to the bottom of an oven safe casserole dish. Gently place the stuffed mushroom in the dish. Place casserole dish in the broiler, broil until tops are slightly browned. Turn off broiler and keep mushrooms in for another 10 minutes. Serve warm.
