Spiced Sweet Roasted Red Pepper

& Feta Hummus

 

 

1 can garbanzo beans, drained, reserve juice (15 oz)

1 jar roasted red peppers (4 oz)

3 Tbsp. lemon juice

1 ½ Tbsp. tahini (sesame seed paste)

1 clove garlic, minced

1 tsp. cayenne pepper

¼ tsp. salt

½ cup feta cheese, crumbled

 

In processor puree the garbanzo beans, red peppers, feta cheese, lemon juice, tahini, garlic, cayenne, and salt.  Scrap mixture off the sides of the food processor when processing.  Process until smooth and slightly fluffy.  Can add garbanzo juice to make bring to desired consistency.  Transfer to small bowl and chill.  Return to room temp. before serving.
