Artichoke Bruschetta

 

1 marinated artichoke hearts, drained, patted dry, chopped (6 oz)

½ cup grated romano cheese or parmesan cheese

1/3 cup finely chopped red onion

5-6 Tbsp. mayonnaise

16 french bread baguette (1/3 inch thick)

 

Place first 3 ingredients in bowl.  Then mix in enough mayonnaise to form a thick spread.  Preheat broiler.  Top bread with the spread.  Arrange the topped bread on baking sheet.  Broil until spread is heated and begins to brown, about 2 minutes.
