Salami Mozzarella Egg Rolls

 

 

1 egg, lightly beaten

1 1/2 cups shredded mozzarella

24 slices salami lunch

24 egg roll wrappers 

vegetable oil 

optional: jalapeno slices

 

Preheat oven to 350 degrees.  Beat egg with a fork in small bowl.  Place an eggroll wrapper on plate and brush each side with egg with a pastry brush.  Place a piece of salami in the middle of the wrapper and add desired amount of cheese.  Roll wrapper up from bottom and fold sides in before you finish rolling up wrapper (like a bean burrito).  Continue until fiished with all wrappers.  Place on a parchment lined baking sheet and lightly brush the eggroll tops with veg oil.  Bake for 20 minutes or until golden brown.  Cool slightly and serve warm.
