Mozzarella Stuffed Mushrooms

 

16 oz fresh mushrooms

1 (6oz) package stovetop stuffing mix

1 (10oz) can cream of mushroom soap

½ cup melted butter or margarine

4 oz shredded mozzarella cheese

 

Preheat oven to 350 degrees.  Clean the mushrooms and remove the stems.  Chop the stems and sauté in a nonstick skillet until tender.  Prepare the stuffing using package directions.  Stir in the mushroom stems and cream of mushroom soup.  Dip the mushroom caps in melted butter and arrange in a 9x13 inch baking dish.  Stuff the mushrooms with the stuffing mixture.  Sprinkle the cheese over the stuffed mushrooms.  Bake for 15 minutes or until steaming and lightly browned.
