Baked Avocado Fries

2 large avocados, sliced

1/3 cup flour

salt and pepper to taste

1tsp chili powder

2 eggs, beaten

1 cup Panko bread crumbs

Preheat oven to 425 degrees. In 3 seperate bowls, set up like an assembly line. One bowl with flour, salt, pepper, and chili powder. Second bowl with beaten egg, and the thrid bowl with Panko crumbs.

Place sliced avocado in flour bowl and lightly coat. Then dip into egg bowl and coat. Then into Panko bowl and coat.

Place avocado slices on wire rack over sheet pan and bake for 20 minutes or until golden brown. Enjoy with dipping sauce if desired.
