Garlic and Pepper Hummus

 

2 lrg. garlic cloves, chopped

1 can garbanzo beans (15 oz), drained, reserve juice

1/3 cup tahini (sesame seed paste)

¼ tsp. salt

pepper to taste

1/3 cup fresh lemon juice

1 jar roasted red peppers, chopped and drained (4 oz)

 

Drop garlic in processor, mince.  Scrap sides down.  Add garbanzo beans, tahini, and lemon juice, process until smooth.  Add roasted peppers, process until peppers are finely chopped.  Can add garbanzo juice to bring to desired consistency.  Add salt and pepper.  Transfer to small bowl.  Cover and chill.  Return to room temp. before serving.
