Pineapple Jalapeno Salsa

 

2 cup pineapple, chopped

1 cup diced roma tomatoes

1 Tbsp. lime juice

1 Tbsp. rice wine vinegar

1 Tbsp. vegetable oil

1 Tbsp. gingerroot, grated

2 tsp. jalapeno, seeded and minced

2 tsp. cilantro, minced, leaves only

sea salt to taste

 

Combine all ingredients and mix well.  Cover and chill in refrigerator.  Will keep for 2 to 3 days.
