Caribbean Citrus Marinade

 

¼ cup grapefruit juice

¼ cup chicken broth

¼ cup red wine vinegar

2 Tbsp. sugar

1 Tbsp. Jamaican Jerk Seasoning

1 Tbsp. orange zest

3 garlic cloves, pressed

1 tsp. sea salt

1 tsp. black pepper

½ cup vegetable oil

 

Combine grapefruit juice, chicken stock, vinegar, sugar, Jamaican jerk seasoning, orange zest, garlic , salt and pepper in bowl.  Mix well.  Beat in oil, a little at a time, until mixture is emulsified.  Use immediately, or store in an airtight jar in the refrigerator for 4 to 5 days.  Allow the marinade to come to room temperature before using.
