Nutty Bacon Barbecue Sauce

 

Seasoning:

2 tsp. black pepper

1 tsp. sea salt

1 tsp. onion powder

1 tsp. garlic powder

½ tsp. white pepper

½ tsp. cayenne pepper

 

Sauce:

½ pound bacon, minced

1 ½ cups diced onion

2 cups beef broth

2 cups chili sauce

1 cup honey

½ pecans, toasted and chopped

1 /3 cup orange juice

1 Tbsp. orange zest, minced

¼ cup lemon juice

1 Tbsp. lemon zest, minced

1 tsp. crushed red pepper

¼ cup butter, (1/2 stick) cut into small pieces and cold

 

Combine ingredients for seasoning mix and set aside.  Fry bacon in large saucepan over high heat, until crispy.  Stir in onions, cover pan, and continue cooking, stirring occasionally, until onions are dark brown, but not burned, about 8 or 9 minutes.  Stir in seasoning mixture and cook for another minute.  Add all other ingredients, except butter.  Bring all to a boil.  Reduce heat and simmer for 30 minutes, stir frequently.  Add butter and blend it in with a wire whisk until it is melted and mixed into the sauce.  Let mixture cool for 30 minutes.  Pour into a blender and puree until bacon and pecans are finely chopped.  Will keep refrigerated for up to 1 week in an airtight jar.  Serve warm.  Can use as a dipping sauce for chicken.  Can also cook sauce until reduced by half and can be used as a party dip with chips.
