Ginger Salad Dressing

¼ cup chopped onion

¼ cup peanut oil

2 Tbsp. rice wine vinegar

2 Tbsp. water

1 Tbsp fresh ginger, chopped

1 Tbsp. celery, finely chopped

1 Tbsp. soy sauce

1 ½ tsp. tomato paste

1 ½ tsp. sugar

1 tsp. lemon juice

salt and pepper to taste

 

Blend all in blender until smooth.  Serve over lettuce.
