Zucchini & Stuffing Casserole

 

6 medium zucchini, cubed

¾ cup shredded carrot

½ cup shopped onion

4 Tbsp olive oil

1 ½ cups herbed stuffing cubes

1 (10 oz) can cream of chicken soup

½ cup sour cream

¾ cup herbed stuffing cubes

2 Tbsp melted butter or margarine

 

Preheat oven to 350 degrees.  Place cubed zucchini in microwave safe bowl with a few tablespoons of water.  Microwave on high until almost tender, about 6 minutes.  Drain when finished.  Saute the carrot and onion in the olive oil until tender.  Remove from heat and stir in the 1 ½ cups stuffing cubes, cream of chicken soup and sour cream.  Gently stir in the zucchini.  Pour into an 8x8 glass baking dish.  Toss ¾ cup stuffing cubes with 2 Tbsp melted butter.  Spread over the top of the casserole.  Cover and bake for 30 to 40 minutes.
