Christmas Leftover Casserole


8 medium potatoes peeled and cubed

1/2 cup melted butter (1 stick)

1 can cream of corn (or cream of mushroom)

2 cups chopped ham

2 tsp sea salt

2 tsp pepper

2 tsp parsley

8oz sour cream

1 cup bread crumbs (Italian best)


Preheat overn to 350 degrees. In 13x9 pyrex put potatoes butter. Mix well and add can of cream of corn (undiluted) add sour cream. Mix well. Add in salt, pepper, and parsley. Add in chopped ham. Gently mix.  Sprinkle top with bread crumbs. Bake at 350 degrees for 30min covered then 30min uncovered until bubbly and browned.
