Spicy Mexican Meatloaf

 

1 ½ lbs. ground beef

2/3 cup milk

1/3 cup salsa

½ cup cheddar cheese, shredded

1 Tbsp. Worcestershire sauce

½ tsp. salt

½ tsp. pepper

1 tsp. garlic, minced

1 lrg. egg

3 slices of bread, crumbs

1 medium onion, chopped

1 can El Pato enchilada sauce, yellow can, (8 oz)

 

Heat oven to 350 degrees.  Mix all ingredients except for the can of el pato sauce.  Spread the appropriate size dish.  Pour el pato sauce over the top of meatloaf.  Bake uncovered 1 to 1 ¼ hour until thermometer reads 160 degrees.  Can cut in the middle of meatloaf and check for wellness.
