Zucchini and Ground Beef

1 ½ lbs. ground beef 

4-5 sml. zucchini, or summer squash

1 medium white onion

2-3 cans tomato sauce (6 oz ea.)

1-2 tsp. minced garlic

garlic powder, to taste

onion powder, to taste

salt and pepper, to taste

 

Cook ground beef in large pot, drain.  Cut zucchini into ¼” medallions and slice entire onion into ¼” slices, when quarter.  Fill microwave safe bowl with water and zucchini and onions.  Microwave on high, almost to desired wellness(will cook a little more when added to the pot with beef).  Drain.  Add zucchini and onion to beef in pot.  Pour in tomato sauce, minced garlic, and seasonings.  Stir, cover, and simmer for a few minutes.
