Sweet Onion Pie

 

3 lrg sweet onions, finely chopped

½ cup butter or margarine

3 to 4 Tbsp flour

½ pint cream

salt and pepper to taste

2 eggs, beaten

1 box (2 crust) pie pastry

½ cup shredded cheddar cheese

 

Preheat oven to 350.  sauté onions in the butter until golden brown.  Sprinkle in the flour and stir in the cream.  Add the salt and pepper.  Stir until mixture thickens.  Remove from heat and stir in the eggs.  Pour into an unbaked pie shell.  Sprinkle the shredded cheese over the pie filling before adding the top pastry. Cover with the top pastry, sealing the edges.  Bake for 30 minutes.
