Strawberry Jicama Toss

 

Salad:

6 cups mixed salad greens

1 cup strawberries, sliced

1 cup alfalfa sprout

¾ cup jicama, cut 1x¼ pieces

2 kiwifruit, peeled, cut in half lengthwise, sliced

 

poppy seed dressing:

2 Tbsp. vegetable oil

2 Tbsp. honey

2 Tbsp. orange juice

1 Tbsp. poppy seed

2 tsp. Dijon mustard

 

Toss salad together.  Mix dressing ingredients together.  Drizzle poppy seed dressing over salad.  Serve chilled.
