Chinese Chicken Salad

 

 

3 cup chicken, shredded and cooked

3 cup iceberg lettuce, shredded

½ cup carrots, shredded

1 sml. can water chestnuts, drained and thinly sliced

2 scallions/green onions, chopped (green and white parts)

¼ tsp. dry mustard

2 Tbsp. sesame seeds, toasted

3 Tbsp. rice vinegar

2 Tbsp. peanut oil

2 Tbsp. soy sauce

2 Tbsp. sugar

2 Tsp. sesame oil

3 Tbsp. almonds, thinly sliced and toasted.

 

 

Place chicken, lettuce, carrots, water chestnuts, and scallions in a large bowl.  Whisk together the rice vinegar, peanut oil, soy sauce, sugar, sesame oil, and dry mustard.  Then toss in with chicken mixture.  Top with toasted almonds.
