Chickpea Salad

 

1 can (15oz) chickpeas, rinsed and drained

½ red onion, thinly sliced

2 stalks celery, sliced

1 cup parsley

2 Tbsp olive oil

2 tsp red wine vinegar

½ tsp salt

¼ tsp pepper

 

In large bowl, combine tall ingredients.  Refrigerate overnight if possible.
