Turkey Veggie Burger
2 cups herbed stuffing, crushed, can use seasoned croutons
1 cup chicken broth
10 oz chopped spinach, thawed, and squeezed dry
1 cup shredded carrots
1 cup minced onions
2 Tbsp minced garlic
2 lbs ground turkey
1 Tbsp onion powder
1 Tbsp garlic powder
salt and pepper to taste
garnish will thinly sliced cucumbers
Preheat oven to 400 degrees. Stir together the stuffing into the chicken broth until moist. In large bowl, mix together spinach, carrots, onions, and garlic. Add the herbed stuffing and chicken broth mix to the veggie mix. Add the ground turkey to the veggie mixture. Sprinkle in the onion powder, garlic powder, and salt and pepper. Gently mix all together. Form into patties (will make about 12 patties). Place 6 patties into a 9x13 glass dish. Bake for 25 to 30 minutes. Serve warm, topped with mustard and cucumbers.
