Gina’s Chicken Lettuce Wraps

 

1 can (10 3/4oz) Campbells Golden Mushroom Soup

cooked leftover chicken breast, thinly sliced and cubed

olive oil

¾ cup grated carrots

¾ cup diced onions

1 cup diced water chestnuts

1 ½ tsp garlic powder, or minced garlic

¼ cup water

pepper to taste

romaine leaves

green onions chopped (if desired, reserve as topping)

 

Add olive oil to pan.  Stir fry carrots, onions, and water chestnuts for a few minutes.  Add chicken stir well.  Add soup, water, garlic, pepper, and water.  Mix well, cook on medium/high stirring constantly.  Remove from stove and spoon mixture into romaine leaves, top with green onions, if desired.   Starting at one of the long edges, roll the romaine lettuce like a burrito.
