Turkey Spinach Burger Stuffed with Onions and Mushrooms
2 cups herbed stuffing, crushed, can use seasoned croutons
1 cup chicken broth
10 oz chopped spinach, thawed, and squeezed dry
1 cup minced onions
2 Tbsp minced garlic
2 lbs ground turkey
1 Tbsp onion powder
1 Tbsp garlic powder
salt and pepper to taste
garnish will thinly sliced cucumbers
1 ½ cups sliced onions
3 cups of mushrooms
1 Tbsp olive oil
Preheat oven to 400 degrees. Stir together the stuffing into the chicken broth until moist. In large bowl, mix together spinach, onions, and garlic. Add the herbed stuffing and chicken broth mix to the veggie mix. Add the ground turkey to the veggie mixture. Sprinkle in the onion powder, garlic powder, and salt and pepper. Gently mix all together. Form into patties (will make about 16 thin patties).
In very large skillet sauté onions and mushrooms. Spoon onion and mushroom mixture on to 8 patties. Top with remaining patties, pinch to seal. Place into a 9x13 glass dish. Bake for 20 to 25 minutes. Serve.
