Spicy Hot Spanish Rice

 

2 Tbsp. vegetable oil

1 cup uncooked regular long grain rice

1 medium onion, chopped (½ cup)

2 ½ cups water

1 ½ tsp. salt

1 tsp. chili powder

¼ tsp. garlic powder

1 can tomato sauce (8 oz)

1 can El Pato Salsa de Jalapeno, green can (8 oz)

½ cup jalapenos, chopped

2 tsp. cayenne pepper

2 tsp. crushed red pepper

1 Tbsp. red hot sauce

 

Heat oil in 10 inch skillet over medium heat.  Cook rice and onion in oil about 5 minutes.  Stir frequently until rice is golden brown and onion is tender.  Stir in remaining ingredients.  Can use more or less of any of these spices.  Cover and simmer until rice is tender, about 30 minutes.  Stir every so often making sure to get rice at the bottom of the pan.  Add water if rice is to dry.
