Special Fried Rice

8 10 cloves garlic, minced

4 cups green onion, divided green part and white bulb part

4-5 cups coleslaw mix, or cut up cabbage and carrots

8 eggs, scrambled and cooked

5 cups any cooked meat, shredded chicken, spam or ham cubes, cooked in own pan

9 stocks celery, chopped, cooked separately

16-20 cups steamed rice, day old, room temp.

1 cup soy sauce

salt and pepper to taste

 

Saute minced garlic, white part of green onion, and coleslaw.  Scramble and cook eggs in a bowl in the microwave.  Lightly recook already cooked meat in separate pan.  Chop and steam celery in microwaveable bowl until tender.  Drain celery, pour into sauté pot with garlic mixture.  Add rice, green part of green onion, eggs and meat.  Mix well.  Add soy sauce and salt and pepper.  Serve.

1 rice cup (3/4 cup) = 2 cups cooked rice (regular cup, 8 oz)
