Onions Au Gratin

 

2 Tbsp. butter or margarine

5 medium onions, thinly sliced, separated into rings (5 cups)

2 cups cheddar cheese, shredded

1/3 cup packaged biscuit mix

1/8 tsp. ground black pepper

½ cup cheddar cheese, shredded

 

Preheat oven to 350 degrees.  Grease a 1 ½ quart casserole dish, set aside.  In large sauce pan, melt butter.  Add onions and cook covered, over medium heat 10 to 15 minutes or until tender, stir occasionally.  Remove from heat.  Stir the 2 cups of cheddar cheese, biscuit mix and pepper into the onion mixture.  Transfer the mixture to prepared casserole dish.  Sprinkle with ½ cup cheddar cheese.  Bake uncovered for 30 minutes.  Serve immediately.
