Pineapple Rice

 

1 can (15 ¼oz) or 2 (8oz) pineapple tidbits

¾ cup uncooked long grain rice

 

Drain pineapple, reserve juice.  Set pineapple aside.  Add enough water to reserved juice to equal 1 ¾ cups.  In a medium saucepan stir together juice mixture and rice.  Bring to a boil, and reduce heat.  Simmer covered for 18 minutes.  Remove from heat.  Stir in pineapple.  Let stand covered for 5 minutes.  Great with teriyaki chicken or pineapple chicken.
