Puffy Apple Oven Pancake

 

2 Tbsp. margarine or butter

2 Tbsp. packed brown sugar

¼ tsp. cinnamon

2 lrg. eggs

½ cup flour

½ cup milk

¼ tsp. salt

1 cup apple, peeled and thinly sliced

powdered sugar

 

Preheat oven to 400 degrees.  Melt margarine in pie dish.  Brush margarine up inside of pie dish.  When melted, sprinkle brown sugar and cinnamon over melted margarine.  Place dish back in the oven.  In separate bowl, beat eggs.  Add flour, milk, and salt.  Do not overbeat.  Arrange apples in dish on top of sugar, cinnamon and melted margarine.  Pour egg mixture over apples.  Bake for 30 to 35 minutes.  When finished, immediately loosen edge of pancake and turn upside down onto heatproof serving plate.  Sprinkle with powdered sugar.
