Onion and Cheddar Quiche

 

 

1 pastry shell (9” deep dish frozen pie shell works)

3 Tbsp. butter

3 lrg. onions, thinly sliced (sweet onions or Maui onions are best)

1 sml. celery, chopped

4 eggs

1 ½ cup half and half

¼ lbs sharp cheddar cheese, grated

1 tsp. parsley flakes

½ tsp. pepper


Preheat oven to 325 degrees.  Melt the butter in a heavy skillet, add the onions and celery, sauté until tender.  Lightly beat eggs. Add eggs, half and half, cheese, parsley, and pepper to the onions and stir until smooth.  Set pastry shell on a cookie sheet and pour the mixture in.  Bake for 30 to 40 minutes or until top is puffed up and browned and a knife inserted in the center comes out clean.  Remove from the oven and carefully slide onto a wire rack for 10 to 15 minutes.  Slice and serve.
