Mushroom Onion and Egg Pizzetta

 

8 egg whites

pepper to taste

olive oil

½ cup tomato sauce

2 small turkey sausages cut into 1 inch pieces (about 6 oz)

6 button mushrooms, sliced (about 1 cup)

1 Tbsp diced red onion

½ cup shredded mozzarella cheese

 

Preheat the broiler.  Season the egg whites with pepper to taste.  Set a small oven safe pan over medium heat.  Pour the olive oil into pan and pour in half of the egg whites.  Cook for 2 minutes, turn over for 1 minute.  Remove from heat.  Spread tomato sauce on top.  Add the sausage, mushrooms, onions, and mozzarella cheese.  Place under broiler for about 10 minutes.  Cut in half and serve.  Makes 2 servings.
