Portobello and Canadian Bacon Frittata

 

8 egg whites

1 cup scallions, finely sliced

salt and pepper to taste

2 tsp olive oil

4 cups portobello mushrooms, sliced (about 4 cups)

½ lb lean Canadian bacon, sliced and diced

 

Preheat the broiler.  Combine the egg whites and scallions in a small mixing bowl.  Season with salt and pepper to taste.  Heat olive oil in a medium sized, oven safe, pan using medium heat.  Add the mushrooms and Canadian bacon, sauté for 3 minutes.  Add the egg mixture and let set for 2 minutes.  Place under the broiler for 3 minutes or until cooked.  Cut the frittata in half and serve.  Makes 2 servings.
