Paradise in a Pan

6 slices bacon, cooked and drained

3 cups hash brown potatoes 

1/2 cup diced onions

1 cup shredded monterey jack cheese

4 eggs

 

Cook bacon until crisp.  Drain and reserve 2 Tbsp of drippings in skillet.  Set bacon aside.  Cook frozen has browns potatoes in reserved drippings until golden.  Crumble 2 slices of bacon and stir into potatoes. Flatten out potatoes to cover bottom of pan. Sprinkle cheese over potatoes.  Place remaining 4 slices of bacon in an X on top of the cheese.  Carefully break one egg into each triangle formed by the bacon.  Cover and cook over medium heat until eggs are cooked.  Makes 4 servings.
