Strawberry Bread

2 cups sugar

1 tsp baking soda

½ tsp salt

1 tsp cinnamon

4 eggs

1 cup vegetable oil

2 pkg (10oz ea) frozen strawberries, drained, juice reserved

3 cups flour

1 pkg (8 oz) cream cheese, softened

1 2/ cup powdered sugar

1/3 cup butter or margarine

1/3 cup juice from frozen strawberries

 

Preheat oven to 325 degrees.  Mix the sugar, baking soda, salt, and cinnamon in a large bowl.  Add the eggs, oil, and strawberries, mix well.  Add the flour and mix well.  Spoon the batter into 2 greased 5x9 inch loaf pans.  Bake for 30 to 40 minutes or until a wooden pick inserted in the center of loaves comes out clean.  Remove from pans and cool.  Blend the cream cheese, powdered sugar, butter and strawberry juice until smooth.  Serve with the bread.
